Apple Pie Quinoa for breakfast!
I’ve been having fun creating more new recipes with quinoa. I just can’t get enough of it! Experimenting with different flavor combinations has always been a big interest of mine. Why should healthy food taste boring or be a lot of work to prepare!
Quinoa (pronounced “Keen-wa”) is a complete protein and along with the fiber, vitamins, minerals, carbohydrates, and healthy fat, is an excellent seed to build a vegetarian meal with. It has a light, delicate taste, and can be substituted for almost any other grain, rice or pasta in your dishes.
Today I am sharing a new recipe I created…Apple Pie Quinoa…hope you enjoy!
Apple Pie Quinoa – serves 1
1 cup cooked quinoa (soaked first…the reason why and how to is here)
½ apple, unpeeled & chopped (your choice – I prefer Granny Smith)
1 Tablespoon Wildtree Coconut Oil (where to buy)
1 ½ – 2 teaspoons Grade B Maple Syrup
1 drop YLEO Cinnamon Bark Essential Oil (where to buy)
1 drop YLEO Clove Essential Oil (where to buy)
Soak and rinse quinoa before cooking. Heat water til boiling; reduce heat to a low simmer and add quinoa. Cover. Stir every few minutes until the water is absorbed. When cooked, fluff with a fork, cover and set aside. (*TIP- I cook 1 cup quinoa in 1 1/4 cups water to make a little over 3 cups of quinoa. This gives me enough to use for 3 meals and cuts down on prep time.)
Heat coconut oil on medium heat. Add chopped apple and sauté until crisp-tender. Stir in quinoa to heat through. Remove from heat and stir in maple syrup mixed with the essential oils. Enjoy!
