Sunshine Quinoa Breakfast
Brrrr…it is a cold morning in North Dakota! Most mornings I like to start the day with a RAW Protein & Fruit Shake, but sometimes a warm breakfast hits the spot the best.
Recently I discovered the very versatile grain Quinoa, and I am hooked. I have found that it is great whether hot or cold, sweet or spicy.
This morning I had one of my breakfast creations called Sunshine Quinoa. It reminds me of a burst of sunshine with the orange juice, zest and craisins to tingle your taste buds.
So whether you have a long commute to work or a few seconds to the home office, like me, this will keep you fueled until lunch time. Hope you enjoy!
Sunshine Quinoa Breakfast - (me) 3 (heaping 1 cup) servings
1 cup quinoa (soaked first…the reason why and directions are here)
1 ¼ Tablespoons coconut oil
1 ¼ Tablespoons orange zest
1 orange, juiced
1/4 cup craisins
1/4 tsp ground Cinnamon
pinch of ground Nutmeg
a dash of Mace
1 – 2 Tablespoons maple syrup
Soak and rinse quinoa before cooking. Heat water til boiling; reduce heat to a low simmer and add quinoa. Cover. Stir every few minutes until the water is absorbed. When cooked, fluff with a fork, cover and set aside. (*TIP- I cook 1 cup quinoa in 1 1/4 cups water to make a little over 3 cups of quinoa. This gives me enough to use for 3 meals and cuts down on prep time.)
Zest the orange and then juice the orange. Place the juice with 1 ¼ Tablespoons zest in a small bowl along with the craisins. Set aside.
Warm the coconut oil in a pan.
Add the cooked quinoa, orange zest, orange juice, craisins, cinnamon, nutmeg, mace and maple syrup to the coconut oil. Stir well to combine and heat thoroughly. Serve warm. (I like to pour a little So Delicious Coconut Beverage over mine before eating.)
